SEL Cooks || Skinny Muffins

If you are in search for the perfect guilt-free treat, then these muffins are for you! For a little over a week now, I have been very cautious about the food I am consuming (I am down 7 pounds I might add!) I have learned that you do not have to suffer while trying to eat healthy. There are many healthy sweets that can still be enjoyed. 

So, I went to the internet to find a little something sweet I could eat, without interfering with my healthy eating. I came across this skinny muffin recipe via Sally's Baking Addiction. I knew I had to give this recipe a try. The only change I made to this recipe was that I added white chocolate chips instead of milk chocolate. 

These muffins are practically fat-free and they are only 140 calories each.  

Ingredients

1 and 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 cup granulated sugar
1/4 cup light brown sugar, packed
1/2 cup + 2 Tablespoons unsweetened applesauce
1 egg white, beaten
2/3 cup diced strawberries
1/3 cup mini white chocolate chips

Directions:
Preheat oven to 350F

Line muffin tin with liners, or spray pan with nonstick cooking spray.

In a large bowl, mix flour, baking soda and cinnamon. In a separate bowl, mix granulated sugar, light brown sugar and applesauce. By using a fork, it will help break up the brown sugar. Add the beaten egg until mixed. Combine the wet ingredients with the dry. It is important to not over mix but to just incorporate until just combined. Fold in the strawberries and the white chocolate chips.

Distribute the batter evenly between 10 muffin cups. Bake for 15-20 minutes until lightly golden.

What is your occupation? If you are attending school and do not work, what is your major?
 I’m a student! I’m a Communication Studies major with minors in History and Leadership Studies.

Where is your hometown located and what do you love about it?
My hometown is in central Virginia, I love how pretty and historical it is.

 List any hobbies/talents you posses.
One of my hobbies is writing and I want to be a journalist at some point in my life!
My sole talent is horseback riding.

How would you define your personal style?
 Classic Prep!

Tell me a little bit about your blog (e.g. name, genre, etc.)
My blog is Lindsey’s Thoughts (www.lmartthoughts.com). It’s a lifestyle/tip centered blog with a variety of other posts as well.

How did start blogging and how long have you been a blogger?
I started blogging in June of 2011 (3 years ago!) because I was complaining in one of my classes how expensive shorts were/are. My teacher told me, hey you like to write, go start a blog and bring awareness. So, I did and bam, Lindsey’s Thoughts was born!

How do you find inspiration for your blog?
            Pinterest and friends. I literally send texts out and I ask what they want to see.

What do you ultimately hope to accomplish through blogging?
I want to be able to give people entertainment or a way to spend time.

What is your favorite fall fashion staple?
My Lilly Pulitzer Hayden Sweater, and leggings.

Apple Cider or Hot Cocoa?
Hot Cocoa!

 How do like to style plaid?
 I typically wear plaid socks. My favorite is wearing leggings with Uggs and plaid socks peaking out of the top of the boot.

How do you celebrate fall?
I spend fall in school, but one of my favorite things as a kid was going to an apple orchard with my family. Oddly enough, I also celebrate by pulling out my fall clothes after a hot Virginia summer.

Home Exterior || Pink Doors

I have recently noticed that pink doors are becoming a growing trend among home owners. I instantly fell in love with this idea, however, my husband did not. A girl can dream right?

I have seen many homes that have a statement entry door. For instance, turquoise and red are among the most popular that I have seen. Pink takes it to a whole new level. It creates a cheerful and welcoming entrance. I personally prefer the coral/pink tone, but the light pink also has me swooning.

Fall Style || Plaid & Sequins

My recent style obsession is plaid and sequins. I am always looking for different ways to style plaid. I often pair it with leopard because I adore print mixing. Then of course, there is always the classic way to wear plaid with leggings and boots. 

But when I came across plaid paired with sequins, it was love at first sight. Sequins dress plaid up a bit and create an all around beautiful look. If you would like to dress it up even more, a fur vest or fur scarf might do the trick. 

I am now in search for a perfect sequin skirt, especially before the Holidays arrive.

Meet a Blogger Monday: Featuring Jaclyn

I am happy to announce that Meet a Blogger Monday's are back! I have truly missed getting to "meet" and learn a little bit about fellow bloggers. I created this series because I wanted more interaction within the blogging community. Through interviews, I get to learn a little bit about the person as well as their blog. My hope is that even after the interviews, I get to remain in contact with these amazing participants. Each Monday, a new blogger will be introduced. The Interview
Lifestyle Questions: 
-What is your occupation? If you are attending school and do not work, what is your major? I am a graduate student. I am in my second semester in the College Student Affairs program. I will graduate next December 2015.

-Where is your hometown located and what do you love about it? I am from South Jersey. I love that it is a family feel. I grew up there my whole life so I love that I can always go back there to feel like myself and feel comfortable.

-List any hobbies/talents you posses. I used to play field hockey from 5th grade through college. I really enjoy reading...anything – blogs, newspapers, books, anything. I would give up my athletic talents though to be able to sing like Carrie Underwood!

-How would you define your personal style? I think my personal style is ever changing. I like to keep up with the ever changing fashion world but I also like to stay classic too.

-Tell me a little bit about your blog (e.g. name, genre, etc.) My blog is called Destination TBD. I write about pretty much anything. I am hoping to get more into recipe posts. I came up with the name for my blog because I am trying to figure out where I want to end up and there are so many places I want to go, see and live and so many things that I want to do that I really don’t know where I’m going to end up.

-How did start blogging and how long have you been a blogger? I started blogging because a few summers ago I stumbled upon some blogs, I can’t remember how, but ever since then I have to read them every single day. I have been blogging since May. After reading different blogs I decided that I wanted to start my own but it took me a while to actually put it into action. I started right after graduation and joined the Her Campus Blogger Network, which has helped me to stick to my commitment.

-How do you find inspiration for your blog? I find inspiration for my blog by reading other blogs. I also find it useful to use the notes application on my phone because sometimes post inspiration will come to mind and I will quickly forget it if I don’t use the app.

-What do you ultimately hope to accomplish through blogging? My ultimate goal is to find a sense of community. I read about great friendships that other bloggers have found through their blogs and I hope to have that same experience.

Fall Questions:
-What is your favorite fall fashion staple? Scarves! In the fall I seriously wear a scarf every day as either part of my outfit or just with my coat.

-Apple Cider or Hot Cocoa? Depends on the mood – I usually would rather drink apple cider during the day and then hot cocoa at night.

-How do like to style plaid? I love the plaid style. My favorite is the Zara scarf. I don’t have that exact scarf but I got one that is similar looking from Charlotte Russe. I saw another great look-a-like Zara scarf at Target too.

-How do you celebrate fall? I haven’t been pumpkin carving in soooo long so I’m really hoping to get to a pumpkin patch soon to pick some pumpkins and monogram them haha! My favorite thing about the fall though is the weather and being able to light Bath and Body Works candles in their fall scents.

Home Details || Gallery Wall Inspiration

Our master bedroom is calling for a gallery wall. I have found that gallery walls are my most recent obsession. So I figured why not create a post that inspires me, as well as others, to create one?Pinterest is my ultimate go-to for lovely gallery wall photos. It has provided me with so much inspiration for a multitude of around the house projects.

What exactly is a gallery wall you might ask. A gallery wall is strictly your OWN personal style hung up on the wall for you, and others, to enjoy. You can incorporate person photos, framed quotes you favor and any nicknacks of your choice. I personally love a mixed variety of colors, frame sizes, and nicknacks, this keeps things interesting. For example, I picked up a pair of gold antlers attached to a white plaque that will mix nicely with a variety of images.

Steps I Will Take:

-Go thrifting for antique frames and paint if need be
-Visit a local supply store to print off quotes I have found (via online) on matte photo paper
-Print any personal photos I wish to include
-Visit Hobby Lobby/TJ Maxx for nicknacks (These are my personal faves)
-Figure out the layout for my gallery wall (this may take a while)
-Hang images, here are a few options to hanging your masterpiece: Frame and nails, clipboards, command strips, or washi tape
